Antonia is making 6 different recipes this week, all delicious and low carb with lots of variety so there is a recipe for everyone!

Fudge fat bombs

Prep Time 5 minutes

Ingredients

  • 3 tsp Stevia
  • 100g Almond Butter
  • 50g Cacao Powder
  • 8 tbsp Coconut Oil
  • 50g Coconut Flour

Method

  1. Over a medium heat, combine and melt almond butter and coconut oil. In the same pot, add dried ingredients and stir until well combined.
  2. Pour mixture into bowl and place in the freezer for 45 minutes.
  3. Once solidified, remove the bowl from the freezer and form the mixture into balls. Tip: Regularly wash your hands under cold water to avoid the coconut oil melting in your hands.
  4. Place the 30 fat bombs into the freezer on a flat tray for 15-20 minutes and enjoy!

Low carb sushi

Ingredients

  • ½ Medium Cucumber

Salmon Rolls:

  • 56g Smoked Salmon
  • ¼ Medium Avocado
  • ½ Spring Onion
  • 1 tbsp Soft Cheese

Vegetable Rolls:

  • ¼ Medium Avocado
  • ½ Spring Onion
  • ¼ Medium Carrot
  • ¼ Red Pepper
  • 1 tbsp Soft Cheese
  • 2 Tbsp Soy Sauce

Method

  1. Wash the cucumber and cut it into 2 cm thick slices.
  2. Using a knife or small spoon remove the seeds inside the cucumber slices until you are left with a ring.
  3. Cut the smoked salmon, avocado, spring onion, and red pepper into small, thin 2 cm long slices. Grate or julienne the carrot.
  4. Fill half the cucumber slices with the salmon filling, starting with the smoked salmon and adding a small amount of avocado, cream cheese and some spring onions.
  5. Fill the other half of the slices with the vegetable filling, starting with the avocado, then adding small amounts of the spring onion, carrot, red pepper and finally soft cheese.
  6. Serve on a plate with soy sauce and enjoy!

Chicken lettuce wrap

Ingredients

  • 1 tbsp Olive Oil
  • 2 Garlic Cloves
  • 450g Chicken Breasts
  • 150g Red Peppers
  • 200g Cucumber
  • 100g Mayonnaise
  • 8 Iceberg Lettuce Leaves

Method

  1. Heat the olive oil in a large frying pan and then sauté the garlic for a couple of minutes.
  2. Add the chicken and season with the salt and pepper then fry until the chicken is cooked through.
  3. Allow the chicken to cool and then slice.
  4. Add the chicken to a bowl and combine with the red pepper, cucumber, mayonnaise and season.
  5. Equally divide the filling between the 8 lettuce leaves.

Prawn avocado courgetti

Ingredients

  • 1 Small Courgette (150g)
  • 1 Medium Avocado
  • 1 tbsp. Lemon Juice
  • 1 tbsp. Olive Oil
  • 80g Cherry Tomatoes
  • 80g Cooked Prawns
  • 1 tsp. Chilli Flakes

Method

  1. Spiralise the courgette to make courgette noodles and put these in a lunchbox or bowl.
  2. Mash the avocado with the lemon juice and olive oil, then stir through the courgetti.
  3. Halve the cherry tomatoes, then add to the courgetti along with the cooked prawns.
  4. Sprinkle with chilli flakes and serve.

Buddha bowl

Prep time 10 minutes

Ingredients

150g Tofu

120g Tinned Chickpeas 

½ tsp Ground Cumin

½ tsp Turmeric 

Salt & Pepper, to taste

2 tbsp Olive Oil

2 Handfuls of Spinach

1 Medium Avocado

150g Cherry Tomatoes

Juice of 1 Lime 

1 tbsp Sesame Seeds

Preparation Method

  1. Cut the tofu into cubes and add to a bowl with the chickpeas then season with the cumin, turmeric, salt, pepper and 1 tbsp of olive oil. Mix well.
  2. Share out the tofu and chickpeas between two bowls along with the spinach, sliced avocado and halved tomatoes.
  3. Squeeze the lime juice over each bowl then drizzle in the remaining oil, sprinkle with sesame seeds and serve.

  • 1 Egg
  • ½ tsp Vanilla extract
  • 1 tbsp Cocoa powder
  • ½ tsp Baking powder
  • 15g Butter (softened)

Toppings (optional)

  • Cream
  • Berries (raspberries/strawberries/blueberries)

Method

  1. Combine ingredients in a mug or a similar size microwavable container
  2. Microwave on high for 1 ½ minutes.
  3. Leave to cool slightly then top with berries and cream.
