A great way to get plenty of vegetables in your diet without even noticing.

Ingredients

  • 100g Cauliflower
  • 75g Broccoli
  • 125g Celeriac
  • 1 Medium Carrot
  • 1 Medium Onion
  • 3 Garlic Cloves
  • 2 tbsp Olive Oil
  • Salt & Pepper
  • 2 Medium Eggs
  • 120g Feta Cheese

Preparation Method

  1. Preheat the oven to 200°C/180°C fan (390°F/350°F fan).
  2. Prepare the vegetables and place them in a bowl with the garlic. Season with salt and pepper, add 1 tbsp of the oil and toss, then transfer to a large roasting tray.
  3. Roast for 20 to 30 minutes, then remove from the oven.
  4. Heat the remaining oil in a non-stick frying pan over a medium heat. Chop the roasted vegetables into small chunks and add them to the pan.
  5. Mash the vegetables with a potato masher and stir so they are well mixed. Fry for 10 to 15 minutes.
  6. When the vegetables are well cooked, push them to one side of the pan and crack the eggs into the empty side.
  7. Once the eggs are cooked, divide the vegetables between two plates and top each with a fried egg and the crumbled feta.
