A great way to get plenty of vegetables in your diet without even noticing.

Ingredients
- 100g Cauliflower
- 75g Broccoli
- 125g Celeriac
- 1 Medium Carrot
- 1 Medium Onion
- 3 Garlic Cloves
- 2 tbsp Olive Oil
- Salt & Pepper
- 2 Medium Eggs
- 120g Feta Cheese
Preparation Method
- Preheat the oven to 200°C/180°C fan (390°F/350°F fan).
- Prepare the vegetables and place them in a bowl with the garlic. Season with salt and pepper, add 1 tbsp of the oil and toss, then transfer to a large roasting tray.
- Roast for 20 to 30 minutes, then remove from the oven.
- Heat the remaining oil in a non-stick frying pan over a medium heat. Chop the roasted vegetables into small chunks and add them to the pan.
- Mash the vegetables with a potato masher and stir so they are well mixed. Fry for 10 to 15 minutes.
- When the vegetables are well cooked, push them to one side of the pan and crack the eggs into the empty side.
- Once the eggs are cooked, divide the vegetables between two plates and top each with a fried egg and the crumbled feta.
