Ingredients

For the low carb rolls

  • 50g Coconut Flour
  • 10g Milled Flaxseed
  • ½ tsp Salt
  • 3 Medium Eggs
  • 1 tbsp Butter, Melted
  • 10ml Water

For the keema

  • 1 tsp Ghee
  • 1 tsp Cumin Seeds
  • 1 tsp Fenugreek Seeds
  • 100g Onion
  • 2 Garlic Cloves
  • 5g Fresh Ginger
  • 1 Green Chilli
  • 250g Lamb Mince
  • 2 tsp Garam Masala
  • ½ tsp Ground Turmeric
  • 200g Canned Tomatoes
  • 250ml Boiling Water
  • 150g Frozen Peas

To serve

  • 30g Butter
  • 3 Medium Eggs
  • 15g Fresh Coriander

Preparation Method

  1. Preheat the oven to 180°C/160°C fan (350°F/320°F fan). Chop the onion and green chilli and peel the ginger.
  2. To make the rolls, combine the coconut flour, flaxseed and salt in a bowl.
  3. In a second bowl, whisk the eggs, then pour in the melted butter and water and mix until well combined.
  4. Add the dry ingredients to the wet ingredients and mix until the mixture forms a thick dough.
  5. Use your hands to form the dough into 3 rolls and place them on a lined baking tray. Bake for 35 minutes, then leave to cool.
  6. While the rolls bake, place the onion, garlic, ginger and chilli in a food processor and pulse until finely chopped.
  7. Heat the ghee in a large pan, add the cumin seeds and fenugreek seeds and fry until they start to pop.
  8. Add the onion mixture and fry for 1 to 2 minutes until fragrant.
  9. Add the lamb mince, stirring to break up any lumps and coat it in the spices. Fry for 5 to 6 minutes until browned.
  10. Stir through the garam masala and turmeric, then add the tomatoes and boiling water. Simmer for 30 to 35 minutes until the lamb is cooked.
  11. Add the peas and cook for a further 5 minutes.
  12. Slice the rolls in half and toast them in a toaster or under the grill, then spread both halves with 20g of the butter.
  13. Heat the remaining butter in a small frying pan and fry the eggs until cooked to your preference.
  14. Fill the buttered rolls with the keema, top each with a fried egg and sprinkle with fresh coriander.
