This delicious one pot chicken is a feast for the family with little fuss, a chicken, some vegetables and an oven.
Serves 10
Ingredients
- 4 sticks of celery
- 2 leeks
- 4 large carrots
- 1 lemon
- 4 tbsp. olive oil
- 2 tsp. mixed herbs
- 1g salt
- 1 large chicken
Method
- Preheat the oven to 200°C/180°C fan (390°F/350°F fan).
- Start by preparing the vegetables, cut the celery stalks in half, then roughly chop the leeks and peel the carrots then chop into batons.
- Add the vegetables into a deep ovenproof pot, add the large chickens on top.
- Cut the lemon in half, then add each half of lemon to each inside of the chicken.
- Drizzle the chicken with olive oil and sprinkle over the mixed herbs and season with sea salt.
- Add the pot to the preheated oven for 30 minutes until lightly browned.
- Reduce the oven temperature to 120°C/100°C fan (250°F/210°F fan) and add a lid onto the pot or cover with foil.
- Cook for 1 hour and a half or until the chicken is cooked through and juices run clear.
- Carve the chicken and the enjoy with the family. You can always save the leftovers for another day!
